I rt clicked the paper I wanted to delselect and the comfirm button appears to be greyed out ( see photo)

The papers that come by default cannot be removed this way. This Remove button is only for paper you have created yourself. If all you want to do is disable the paper from your pen, just toggle off the paper button.

to toggle on/off the paper, it's the Paper button from the main bar (it's not inside the paper panel),
(the button is located at the 5th position from the end, between the Stencil button and the Grid button),
you have to open and go to the paper panel only when you need to select/change of paper,
and to tweak the different paper's settings (hardness, invert, flip, ...etc).

The papers are accessible via the finder (Mac): TVP -> LMB, "show contents", contents -> resources -> papers. I've deleted all I didn't need. (They'll come back with the next install, so I have to repeat this step with each upgrade.)
TVP 10.0.18 and 11.0 MacPro Quadcore 3GHz 16GB OS 10.6.8 Quicktime 7.6.6
TVP 11.0 and 11.7 MacPro 12core 3GHz 32GB OS 10.11 Quicktime 10.7.3
TVP 11.7 Mac Mini M2pro 32GB OS 13.5
